MY INNER LIGHT

 

                A GREAT FAJITTA RECIPE

This is one of my God kids favorite recipes. This version will feed eight people. Adjust it how you wish.

Chicken Fajitas:

1. 2-5lb packs of boneless chicken breast.

2. Large bottle of teriyaki sauce.

3. 3-large Bell Peppers

4. 1 Large onion

5. 1-pkg mushrooms

6. 1- bottle apple cider vinegar

7. 2-packs large tortillas

8. 1- large package of cheese(or block and then grate)

Guacamole:

1. 5- large avocados

2. 1- container garlic salt

3. 1- container garlic powder

4. 1- container cumin

5. 1- large tomato

6. 1- can pitted black olives

7. 1-container sour cream

On a CLEAN cutting board, slice all the chicken into small strips. Pour the bottle of teriyaki sauce into a deep dish pan. Place the cut chicken strips into the pan and make sure they are even throughout the pan. Cover the pan and place in the fridge to marinate.

Cut all the avocadoes in half, throw pits away(or wash a couple off and give them to your cat, and watch her bat them all over the house) scoop the contents into a bowl. Now I have never been much for following directions to the tee, so I take a tablespoon of garlic salt and a teaspoon of garlic powder and drop it in. then take two teaspoons of cumin and drop it in. Wisk the crap out of it(or for us lazy people, throw all the contents into the magic bullet and grind away. When sufficiently mixed, taste test. You can add more of each ingredient to suit your pallet. (be careful with the garlic salt, it can be your guacs downfall. Dice the tomato, slice the olives. (this is a perfect job for teenagers) put two large spoonfuls of sour cream, the diced tomatoes, and sliced olives into the bowl of guac and remix. Once you are satisfied with the taste, cover and put in the fridge.

Take your bell peppers, onion, and mushrooms, and prepare for slicing. You can cut them to whatever size you desire. Put all three veggies into a strainer and wash them very well. Place in a bowl, cover and put in the fridge. I usually put the cheese into a bowl and store in the fridge, its a lot easier to reach into a bowl than a package when you are cooking. I start this prep about two hours before I want to start cooking. This gives the chicken(or steak) time to properly marinate. One last convenient step in the prep process is to tear off strips of aluminum foil large enough to roll two tortillas at a time into. Except for small children, it’s a safe bet that everyone else will want at least two fajitas. So two at a time wrap up your tortillas and set aside(it’s a good idea make extra wraps, especially for bottomless pit teens.) what you will do is turn your oven on warm and place the wraps on a cookie sheet when you begin cooking. By the time your food is ready, you will have warn tortillas to serve. I invested in a heat lamp for things like this, but the oven works great. (make sure you twist both ends of your wraps, exposed tortilla ends will harden with heat)

COOKING:

I cant stress medium burner heat enough. You are going to be doing multiple things, and chicken burns easy. Pour some apple cider vinegar and a teaspoon of margarine into your pan. Add a couple handfuls of chicken, add your favorite poultry seasoning, stir and cover.

Get your veggies and begin sautéing on LOW heat with a bit of the vinegar and whatever you usually sauté with. Stir until all the veggies are saturated evenly, cover and let cook.(keep a close eye on your veggies, sautéing sauces can evaporate quickly)

Finish your meat and veggies. If you know every member of your family will eat the veggies, you can mix the chicken and veggies. I have one child that refuses to eat onions, but will munch on mushrooms right out of the field. So I put all the chicken in a large pan and cover, the same with the veggies. Set everything on the table and let them build their own. (and get some guac for myself before the animals eat it all.) 

OPTIONAL DESSERT RECIPE

Deep fried ice cream

This is for the energetic cook, and a reward for good grades, or a job well done. It takes a lot of prep.

1. Your favorite Ice Cream

2. your favorite cereal

3. sugar

4. cinnamon

5. several sheets of aluminum foil

6. eggs

7. whip cream(canned)

8. maraschino cherries

9. small deep frier or crock pot

10. large ice cream scoop

11. you can present in bowls, or make more interesting by getting large plastic martini glass style cups.

The ice cream must be near frozen. You want to scoop out large balls of ice cream.

1. mix one cup of sugar and one cup of cinnamon in a bowl.

2. crack and whip three eggs into a bowl.

3. crunch up some cereal into a bowl. Not to fine, you want small chunks of cereal.

Scoop out a ball of ice cream.

Roll it in the egg bowl

Roll in the cereal

Roll in the sugar mix

Repeat this process twice with each ice cream ball.

Place on a sheet of foil, rub on some clean cooking oil so the frozen ice cream wont stick. wrap up, immediately place in freezer.

(REMEMBER THE ICE CREAM MUST BE NEAR FROZEN BEFORE YOU START WORKING)

This prep work should be done before prep on the fajitas starts. Follow your usual heat times if you have a deep fryer. For crock pot use, turn the crock pot on high and add new oil ¾ of the way full right before you start cooking the fajitas. The oil should be ready by the time dinner is served and cleaned up.

Take your ice cream balls out of the freezer, the oil you used should allow the foil to be taken off without any trouble.

Place the ice ream ball into a large ladle with holes in it, and completely dip it down into the hot oil for about four to five seconds.(depending on how well your crock pot heats oil.) remove and place in serving cup or bowl, add whip cream and a cherry.

The heat of the oil softens the ice cream, and hardens the cereal shell. It tastes great.

SPANISH RICE AND BEANS

SPANISH RICE AND BEANS.

This is a recipe I have made for my kids many times. It is cheap to put together, and makes more than enough for a tight budget family.

INGREDIENTS: (This is for a family of seven.)

4 packages Great Value spanish Rice and Sauce(Wal-Mart)

4 cans Ranch style beans

1lb Hamburger, sausage, or whatever meat you prefer

1 large package of tortillas

Aluminum foil

PREPERATION:

Follow the directions on the rice packages. If you have a large enough skillet you can make all the rice at once.

Start the meat cooking on low, cover.

Watch the rice, it likes to stick. open the cans of beans and just pour them in a large bowl. the heat of the finished rice and meat will heat the beans, there is no need to cook them.

If you have a heat lamp-great, if not just wrap two tortillas at a time in squares of aluminum foil and place them on a cookie sheet to warm up in the oven.

Mix up all the ingredients when they are cooked and your good to go.

OPTIONS:

You can make the guacamole from the Fajitta recipe, it goes great with this meal.

Salsa also works great.

Try adding sliced olives, tomatoes, and chunks of avacado into the Rice and Beans.

Sour cream spread on the tortillas is awesome.

Just play with the recipe, add things your family likes, It wont make much difference in the price of the meal if you get everything at Wal-Mart.
